Rocket Cheesecake
1 – 40 oz. The Father’s Table Fudge Brownie Cheesecake, defrosted
3 cups Whipped Topping, divided
Blue Food Coloring
Candy Coated Chocolates – blue and red
Pre-made Frosting Letters, optional
Cut a cone-shaped piece about 10” long x 4” wide from the cheesecake to form the cone and middle portion of the rocket. Move the cone-shaped piece to a rigid surface, about 14”x 18”. Use the remaining 2 side pieces as the sides of the rocket. Flip them to place the pointed end at the top of the rocket (see picture). In a bowl, combine 1 1/2 cups whipped topping with blue food coloring; spread on the middle body section. Spread the remaining 1 1/2 cups uncolored whipped topping on the side and cone sections. Decorate with candy coated chocolate. If desired add the letters (USA). Keep refrigerated.
