Pomegranate Berry Cheesecake


1 – 40 oz. The Father’s Table Fudge Brownie Cheesecake, defrosted
1 cup Pomegranate Juice
3 cups Fresh Blackberries, divided
1/2 cup Sugar
1/4 cup Cornstarch
2 TBL. Blackberry Liqueur
1 pint Raspberries
1 1/2 cups Whipped Topping, optional
Fruit Slice Candy, optional

In a small saucepan, combine pomegranate juice, 1 cup blackberries, sugar and cornstarch. Heat to boiling, stirring frequently. Reduce heat and simmer 5 minutes. Remove from heat and mash blackberries in sauce. Add blackberry liqueur to sauce and chill for 20 minutes. Spread sauce on cheesecake. Top with raspberries and remaining blackberries. If desired, pipe whipped topping around edge of cheesecake and add fruit slice candy for garnish. Keep refrigerated.
