1 – 40 oz. The Father’s Table Strawberry Swirl Cheesecake, defrosted
1/2 cup Red Wine (like Cabernet)
1/4 cup Sugar
1/4 cup Water
2 TBL. Cornstarch
1 tsp. Lemon Juice
2 cups Strawberry Whipped Topping
1 pint Strawberries
1 pint Blueberries
1 pint Raspberries
In a microwave-safe bowl, combine red wine, sugar, water and cornstarch. Microwave 1 minute; stir. Continue to microwave for an additional 1 minute or until boiling and thickened. Add lemon juice, stir. Cool sauce to room temperature. Spread whipped topping on cheesecake, adding rosettes along outer edge, if desired. Top with alternating rows of strawberries, blueberries and raspberries. Drizzle Cabernet sauce over berries. Keep refrigerated.
