1 – 40 oz. The Father’s Table Strawberry Swirl Cheesecake, defrosted
2 cups Whipped Topping
Yellow Food Coloring
Decorator Icing – pink and purple
Pink Licorice
Wafer Candies - pink
Coated Fruit Pieces – pink, blue, purple, and green
Transfer the cheesecake to a rigid surface, approximately 14-inches by 14-inches. Cut a center strip, about 1-inch wide, from the center of the cake. To form the butterfly wings, turn the right and the left pieces of cheesecakes so the rounded part is touching the center strip. Cut a small triangular piece from the outside edge of the butterfly wing to make a “notch.” Cut approximately 4 inches from the center strip. In a bowl, combine the whipped topping and a few drops of yellow food coloring; spread over the cheesecake. Place wafer candies on the center strip of the cheesecake and the lower edge of the top wings. Pipe the pink decorator icing on the edge of the top wings and the purple decorator icing on the bottom wings. Arrange the coated fruit pieces on the wings, inside the decorator icing. Pipe decorator icing on the center strip to make a face. Finish by attaching licorice to the top of the head for antennas. Keep refrigerated.
